Feeding the whole family is easy at Norton Plaza. Fill your trolley with the freshest produce for Meat Free Monday through to a fabulous Friday. We’re unpacking 3 tasty dishes to get you eating fresh this season.

Cauliflower Taco

These Tacos provide all the bite, without any meat. Perfect for vegetarian dining!

You’ll need:

  • 2 small heads of cauliflower

  • 2-4tbsp of avocado or coconut oil

  • 3tsp of ground cumin

  • 2tsp of chili powder

  • 2tsp of smoked paprika

  • 1tsp of sea salt

Make it:

  1. Wash your cauliflower and chop into bite-sized pieces. Smaller pieces roast more quickly and help keep this recipe under 30 minutes!
  2. Place cauliflower chunks into a large mixing bowl. Drizzle with oil. Add seasoning. Toss to combine.
  3. Place the seasoned cauliflower on a lined baking tray and roast at 200C for 20-25 minutes.
  4. Serve with fresh Guacamole, hot sauce, toasted almond slithers and Coles Street Tortilla Wraps. Delicious! Use your cooking time to prepare your sides and sauces.

Don’t feel like going vego? Pick up some white fish from Norton Seafood, toss it with fajita seasoning (available at Coles Norton Plaza) and your choice of flour for perfect fish tacos.

Kale and Parmesan Salad

Step into Harris Farm Leichhardt for the healthiest choices around. We’ll be breaking down our favourite, decadent green side.

You’ll need:

  • 1-2 bunches of kale

  • Handful of macadamia nuts (or walnuts)

  • 1 red onion

  • Parmesan, shaved

  • salt to taste

  • 3tbsp of olive oil. Set aside 1 tbsp.

  • 2 tbsp balsamic vinegar / balsamic reduction / roasted onion balsamic vinegar

Make it:

  1. Chop your red onion into slices/rings. Set aside.
  2. Lightly toast your nuts. Set aside.
  3. Wash and chop kale. Lightly dry and place into large mixing bowl. Drizzle 2 tbsp of olive and massage with kale.
  4. Add red onion and toasted nuts. Pour over remaining olive oil and balsamic vinegar. Toss to combine.
  5. Finish with shaved parmesan on top of the salad.

Tuck into this tasty side with a glass of your favourite Chardonnay.

Grilled Mango

Need something sweet? This tasty dessert is low effort and maximum taste.

You’ll need:

  • 1 mango per pair

  • Maple syrup for glazing

Make it:

  1. Cut the cheeks from mangoes and score the flesh.
  2. Brush each cheek with maple syrup and place cut-side up on an oven tray.
  3. Cook under a hot grill (or place cut-side down on preheated chargrill pan) for 2 minutes or until lightly browned and fragrant.
  4. Serve with ice cream, coconut sorbet or gelato.
