Prosciutto, Goat's Cheese and Roasted Vegetable Frittata

Ingredients

6 eggs
¼ cup milk
2 tablespoons parsley, finely chopped
70g Norton St Grocer marinated goat’s cheese
400g Norton St Grocer mixed grilled vegetables
8 Norton St Grocer prosciutto slices
Olive oil for cooking

STEP 1 Whisk eggs, milk and half the cheese together, seasoning lightly with salt and pepper.

STEP 2 Lightly grease fry pan and alternately add grilled vegetables and egg mixture until all items are in the pan, then layer the prosciutto on top. Cook on a medium heat until the frittata is firm but slightly runny in the centre, about 10 minutes.

STEP 3 Place the frittata under a hot grill until the prosciutto is crispy, about 3 minutes. Then dress it
with remaining goat’s cheese and chopped parsley. Try with: Roasted chat potatoes with Italian herbs and a rocket salad.
