Ingredients

1 cup soft pitted dates
1/3 cup desiccated coconut
1/3 cup sunflower seeds
1 ½ tablespoon carob powder
1 teaspoon vanilla bean paste
2 tablespoons coconut oil

STEP 1 Place all ingredients into a food processor and pulse until it forms a heavy crumb mixture (approximately two minutes).

STEP 2 Roll the crumb mixture into ten equal sized balls (you may need to scrunch the mixture to bring it together).

STEP 3 Refrigerate before placing into the lunch box.
