Ingredients
10 peaches, skin washed
6 cloves
1 cinnamon quill
3 star anise
1 cup peanuts
½ cup coconut sugar
250g coconut yoghurt
STEP 1 Preheat your oven to 200°C. Cut the peaches in half, deseed and lightly brown them (flesh down) in a warm frypan. Then, add them to a baking dish with the spices and 1 cup of water. Cover with foil and bake until soft (about 25 mins).
STEP 2 To make the praline, heat the coconut sugar gently in a warm saucepan until bubbling. Meanwhile, roughly chop the peanuts and place them on a lined baking sheet and then pour the sugar syrup over the top. Place in the fridge to set.
STEP 3 To serve, plate the baked peaches with a dollop of yoghurt and a generous slab of the praline.
