SALMON BURGERS WITH CHUNKY AVOCADO SALSA

Ingredients

4 Relish salmon patties
4 Bakers Delight
sourdough rolls
100g rocket
2 large avocados
½ punnet cherry tomatoes
1 lime, zested
Salt and pepper

STEP 1 Place the salmon patties on a baking tray and heat in a 200°c oven until warmed through (approximately 25 minutes).

STEP 2 Quarter the cherry tomatoes and add them to a bowl with the avocados and lightly mash together to form the chunky salsa. Finish by stirring through the lime zest and seasoning with salt and pepper.

STEP 3 To assemble the burger, place the rocket on the base, then the patty and top with the chunky salsa.
