APPLE AND CINNAMON PIKELETS

Ingredients

3 large free-range eggs, separated
1 cup self-raising spelt flour
2 large apples, grated
½ cup Nourish Health Foods sultanas
¾ cup milk
1 tbsp ground cinnamon
2 tbsp maple syrup (optional)

Method

STEP 1 In a clean mixing bowl, whisk the separated egg whites until they form firm peaks. Meanwhile, place the spelt flour in a separate bowl and add the grated apples and the sultanas. Stir these until well combined as it will ensure the pikelets don't have any large clumps of the fruit in them. 

STEP 2 Add the remaining ingredients to the fruit and flour mix and stir thoroughly. Finally, fold the egg whites through gently, ensuring not to over mix.

STEP 3 Heat a greased frypan over a low heat. Dollop small spoonfuls of the batter into the frypan, spacing them evenly apart. Turn once the edges are set and bubbles start to appear on top. Repeat until all of the pikelets are cooked.
