FREE RANGE TURKEY BREAST

Ingredients

1 AC Butchery stuffed
free-range turkey breast roll
200g sugar snap peas
200g green beans
½ small lemon
50g sunflower seeds
Olive oil for serving

STEP 1 Preheat oven to 180°C. Sear each side of the turkey roll then add to baking dish, cover with tin
foil and place into the warm oven. Cook until tender (about 1 hour) and allow it to rest for 15 minutes
before slicing.

STEP 2 Steam the peas and beans until al dente, then place in a bowl of iced water to stop the cooking process. Meanwhile, thinly slice the lemon and add it the serving bowl.

STEP 3 Combine the beans with the lemon slices and sprinkle with sunflower seeds before serving with slices of the turkey breast roll.
