BABY TOMATO PESTO ZOODLES

Ingredients

5 medium zucchini
1 punnet cherry tomatoes
100g Norton St Grocer marinated goat’s cheese

Pesto
½ cup toasted Nourish Health Foods sunflower seeds
1 bunch basil
¼ cup Norton St Grocer parmesan cheese
1 tbsp lemon juice
¾ cup olive oil
½ cup water
Salt and pepper to season

STEP 1 To make the pesto, place the sunflower seeds, basil, parmesan cheese and lemon juice in a food processor and pulse until a thick crumb is formed. With the motor running, slowly pour in the olive oil and water until you reach the consistency of pesto. Season with salt and pepper and set aside.

STEP 2 To make the zoodles, use a spiraliser (I use the GEFU brand, available at Howards Storage World) and spiral cut the zucchini until all the zoodles are formed.

STEP 3 To assemble, lightly toss the zoodles with the pesto and plate with the cherry tomatoes, crumbled goat’s cheese and any leftover sunflower seeds.
