Healthy Avocado Sushi Lunchbox

Ingredients
½ cup of brown rice, ideally pre-soaked for a few hours
1 small tin of dolphin safe tuna
1 medium avocado
2 nori sheets
1 cup no-sugar popcorn
1 large carrot, julienned
1 bunch of grapes
2 coconut water juice boxes

STEP 1 Cook the brown rice as per packet instructions and then set aside to cool.

STEP 2 Once the rice has cooled, mash the avocado and tuna through it, stirring occasionally
until it comes together into a thick consistency.

STEP 3 Cut the nori sheets into quarters (squares) then evenly distribute the rice mixture between each of the rolls and when ready, roll the sushi. Finish by cutting the sushi into small pieces so it’s suitable for little hands. Finish by packing the lunchbox with the other items and the sushi, ideally into a cooler bag.
