Mexican Salad with Green Prawns

Ingredients

1 cup millet
1 can black beans
2 spring onions, finely chopped
½ bunch coriander, finely chopped
1 punnet tomatoes, halved
12 Norton Seafood Australian green
prawns, peeled with tails left on
Salt and pepper for seasoning

Dressing
½ cup olive oil
4 tablespoons lime
2 teaspoons honey
2 teaspoons ground cumin
Salt and pepper for seasoning

STEP 1 Cook the millet as per pack instructions and set aside once done. Then, cook the seasoned green prawns until they just change colour, and set aside too.

STEP 2 Whisk together the dressing ingredients and pour over the cooling millet.

STEP 3 Stir all remaining salad ingredients through the millet salad and scatter the green prawns on
top.
